The best part of Halloween for me, aside from passing out candy to the little ones, is definetly the pumpkin seeds! I love fresh roasted seeds, they are very yummy!
This recipe came from my Mother-in-law. It is simple, and delicious.
Oven Roasted Pumpkin Seeds
Scoop out seeds
Remove as much of the stringy stuff as you can
Rinse in colander
Place seeds in large bowl or pan
Add 4 Cups of Water
Add 2tsp salt per cup of water
(you can use more or less salt as you like, depending on how salty you want it. The water should be pretty salty)
Next day, preheat oven to 250 degrees
Drain seeds in colander
(if you want them less salty, rinse. Otherwise, do not rinse)
Lay out on cookie sheet and place in oven
Roast for approx 2-3 hours - until golden brown
Shake the pans occasionally to mix up the seeds and to roast evenly
Let cool completely before you seal in storage bag or container
* You can make many variations. You can add soy sauce or worcestershire Sauce to the water and use less salt.
You can roast seeds with butter. You can also sprinkle with many different seasonings to
create your own yummy snack.
